Bacon, Lettuce & Tomato Salad

For the Salad

  • 4 slices turkey bacon (25 calories per slice, use 3 slices if your turkey bacon has 35 calories per slice)

  • 3 cups salad greens
  • 1 medium tomato, chopped, about 1/2 cup

For the Dressing

  • 1 tablespoon reduced-fat mayonnaise (50 calories per tablespoon)

  • 2 tablespoon nonfat yogurt
  • Pinch black pepper

Fry the bacon in a skillet that has been lightly misted with nonstick spray. Cook it until it's browned and crisp. Remove from the skillet and set aside to cool.

While the bacon frys prepare the dressing. In a small dish combine all of the ingredietns. Still well. Set aside.

Arrange the salad greens on a plate or bowl. Top with the tomato.  When fresh tomatoes are out of season I use well drained, canned, low-sodium tomatoes. They are so good; they taste like fresh, peeled tomatoes. If you get the kind with added salt, they aren't as good.

Anyway, top the lettuce with the tomato. Crumble the turkey bacon into bite-sized pieces, or snip them with your kitchen scissors. Finally drizzle the dressing over all. If you don't want to make your own dressing, then fat-free ranch is a good substitute. I like my BLT sandwiches with mayonnaise, and the dressing above adds just the right flavor note.

If desired you may add croutons to the salad or serve it with a slice of bread. I've made many variations of this salad over the years, and this is by far my favorite.

Per Serving: 209 Calories; 12g Fat (50.0% calories from fat); 14g Protein; 13g Carbohydrate; 4g Dietary Fiber; 60mg Cholesterol; 890mg Sodium.  Exchanges:1 Lean Meat; 1-1/2 Vegetable; 1-1/2 Fat.
