Fat-Free Stove Top Mac & Cheese

  • 4 ounces elbow macaroni, about 1-cup (not heaping)

  • 1/3 cup instant nonfat dry milk powder mixed with 1/2-cup water OR 1/2 cup evaporated skim milk
  • 1 tablespoon cornstarch
  • 1/4 teaspoon chicken broth powder or 1/4 or a chicken bouillon cube
  • 1/8 teaspoon dry mustard or 1/4-teaspoon prepared mustard
  • Dash EACH black pepper and cayenne pepper
  • 1 cup shredded fat-free cheddar cheese

This is the richest, creamiest fat free macaroni cheese I've found so far. I'm still looking though, and if I find an even better version, I'll be sure to share it.

First prepare the macaroni according to package directions. Do not add any salt or fat to the water. If necessary you may add a small mist of nonstick spray to keep the water from boiling over. When it's done cooking drain it well and return it to the cooking pot.

While the macaroni boils prepare the sauce. Get out a quart-sized saucepan. In it dissolve the cornstarch and dry milk powder in the water (or dissolve the cornstarch in the evaporated skim milk). Add teh chicken broth powder, mustard, black pepper and cayenne pepper. Cook and stir the mixture over medium heat until it boils and thickens. Reduce the heat to very low. Stir in the fat-free cheese. Continue stirring until the cheese melts and the sauce thickens even more. Keep the sauce on very low heat until needed.

After draining the cooked macaroni return it to the pot. Add the cheese sauce. Stir until the sauce is thoroughly melted and creamy and covers the macaroni completely. Serve immediately. Makes a main dish for 2 or a side dish for 4 of moderate appetites. If you crew has hearty appetites then double the recipe.

Per Serving: 334 Calories; 1g Fat (2.9% calories from fat); 29g Protein; 50g Carbohydrate; 1g Dietary Fiber; 12mg Cholesterol; 519mg Sodium.  Exchanges: 3 Grain(Starch); 2-1/2 Lean Meat; 1/2 Non-Fat Milk.

4 side servings.

Per Serving (excluding unknown items): 167 Calories; 1g Fat (2.9% calories from fat); 15g Protein; 25g Carbohydrate; 1g Dietary Fiber; 6mg Cholesterol; 260mg Sodium.  Exchanges: 1 1/2 Grain(Starch); 1 1/2 Lean Meat; 0 Non-Fat Milk; 0 Fat.
