Minestrone Soup
First prepare your vegetables. Chop the onion and the celery. Peel and chop the carrot and mince the garlic. Next heat a tablespoon of canola oil in a large soup pot. Add the vegetables and cook them until the onions are tender and fragrant. Add the remaining ingredients. Allow the soup to simmer for about 20 to 30 minutes, or until the pasta and vegetables are tender and the seasonings have mingled merrily. Makes about 6 servings. This soup freezes well. If you have a small family then serve half on the day you prepare it and freeze half for later. If you must have meat in your soup then feel free to add lean, chopped, cooked ham, or smoked sausage or chicken. If you don't add meat to your soup, then consider serving it with a grilled cheese sandwich. 6 servings. Per Serving: 166 Calories; 3g Fat (15.8% calories from fat); 7g Protein; 29g Carbohydrate; 7g Dietary Fiber; trace Cholesterol; 272mg Sodium. Exchanges: 1 Grain(Starch); 2 Vegetable; 1/2 Fat.
