Low Cost, Low Calorie, Low Fat, Low Sugar, Low Cholesterol, Moderate Sodium, Whole Grain Rich

Minestrone Soup

  • 1 cup chopped onion

  • 1 cup chopped celery
  • 1 cup chopped carrot
  • 1 teaspoon minced garlic
  • 1 tablespoon canola oil
  • 8 cups water
  • 4 teaspoons beef broth powder or 4 beef bouillon cubes
  • 15 ounce can no-salt-added tomatoes
  • 1-1/2 cups cooked kidney beans (1/2 cup uncooked or 15-oz can, rinsed and drained)
  • 2 cups frozen green beans
  • 1/2 c. uncooked elbow macaroni
  • 1 teaspoon basil 
  • 1/2 cup oregano
  • 2 or 3 dashes red pepper flakes or ground red pepper

First prepare your vegetables. Chop the onion and the celery. Peel and chop the carrot and mince the garlic. Next heat a tablespoon of canola oil in a large soup pot. Add the vegetables and cook them until the onions are tender and fragrant. Add the remaining ingredients. Allow the soup to simmer for about 20 to 30 minutes, or until the pasta and vegetables are tender and the seasonings have mingled merrily. Makes about 6 servings. This soup freezes well. If you have a small family then serve half on the day you prepare it and freeze half for later.

If you must have meat in your soup then feel free to add lean, chopped, cooked ham, or smoked sausage or chicken. If you don't add meat to your soup, then consider serving it with a grilled cheese sandwich.
