Easy Hash Browns
Shred the potato with a cheese shredder. Coat a skillet with nonstick spray. Place on a medium heat. Plop the potatoes in the skillet. Press them down and scootch them together into a flat pancake. Sprinkle with salt, pepper and onion powder. Fry for a couple of minutes, or until the underside is lightly browned. Flip and brown the second side. It takes about 5 minutes of cooking all together. The potatoes will stick together nicely and make a delicious addition to your breakfast table. Our favorite way to serve them is topped with a fried egg. To make more than one serving at a time shred as many potatoes as desired and fry them on a large griddle instead of a skillet. Per Serving (excluding unknown items): 104 Calories; 1g Fat (6.7% calories from fat); 3g Protein; 22g Carbohydrate; 2g Dietary Fiber; 0mg Cholesterol; 274mg Sodium.
