For the SaladBegin by preparing the macaroni according to package directions. Do not add any salt. When the macaroni is tender rinse it in cool water and drain well. Drain the water chestnuts. Rinse them in fresh water or macaroni water. Drain again and chop. Meanwhile, in a large bowl combine all of the dressing ingredients. Mix well. Add the prepared macaroni and vegetables. Stir again. Cover the bowl with a clean cloth and set it somewhere cool for the flavors to blend. About 30 minutes is plenty of time. Serve in large portions. Makes 10 servings. Per Serving (excluding unknown items): 219 Calories; 13g Fat (51.3% calories from fat); 4g Protein; 24g Carbohydrate; 2g Dietary Fiber; 5mg Cholesterol; 262mg Sodium. Exchanges: 1 Grain(Starch); 0 Lean Meat; 1/2 Vegetable; 1 Fat; 0 Other Carbohydrates. In this recipe water chestnuts replace the more conventional ingredient celery. If you have fresh celery then omit the water chestnuts and use 1 to 1-1/2 cups finely chopped celery instead. Water chestnuts make a good replacement for celery because they have a mild flavor and provide the necessary crunch. Celery seed is added to make up for the missing celery flavor. All in all it's quite tasty. |
