Pantry Pesto
 
  • 1/2 cup olive or vegetable oil
  • 2 tablespoons dry basil (that's right, tablespoons)
  • 1-1/2 tablespoons minced garlic
  • 1 tablespoon dry parsley
  • 1/2 teaspoon salt
  • 2 tablespoons water
  • 1/4 cup chopped walnuts
  • 1/4 cup grated Parmesan cheese 
 
  1. Put all of the ingredients into a blender. Process until mostly smooth.
  2. Or put all of the ingredients into a bowl and process with a hand blender.
  3. Or put all of the ingredients into a food processor and process until smooth.
  4. Or put all of the ingredients into a bowl and mash with a fork. This will not be as smooth as the other methods, but still makes a tasty finsihed dish.
  5. Serve over fried tofu, canned chicken, pasta, sliced tomatoes or even spread on bread. Easy to make and adds a lot of zip to bland foods.
  6. Makes 6 servings.
