Spanish Omelet
 
  • 1/2 cup whole dried eggs
  • 2 tablespoons dry soymilk powder, unsweetened
  • 3 tablespoons dry onions
  • 1 cup fresh water
  • 2 tablespoons olive or vegetable oil
  • 15-ounce can sliced potatoes
  • 1/3 cup sliced green olives
  • 2 ounce jar of pimiento
  • Salt, Pepper & Parsley to taste
 
First prepare the eggs & onions. In a medium bowl combine the dried eggs, dry milk, onions and water. Mix well. Allow to stand for 10 minutes or so and mix again, until mostly smooth. Heat the oil in a large skillet. Add the potatoes and fry until lightly browned. Pour in the eggs. Cook until the eggs are almost set. You may have to scramble them instead of making an omelet. Don't worry, that's perfectly acceptable. Add the olives and pimiento. Mix well. Sprinkle with salt, pepper and parsley. Continue cooking until the eggs are completely set. Divide between 3 plates and serve. Add GFCF biscuits or fried corn tortillas and orange juice to make a complete meal. Makes 3 large servings.
