Zesty Plums or Apricots
- 4 ounces prunes dried apricots, about
20 or so
- 1-1/2 cups fresh water
- 2 tablespoons powdered orange
breakfast drink or powdered lemonade
After dinner combine the above ingredients in a small saucepan. Place
the lid on the saucepan and allow the fruit to soak overnight. The
next morning simmer the fruit for a few minutes until it's hot and
tender. Serve in small bowls. Makes 4 servings.
Stewed apricots and especially prunes have less than stellar
reputations. Don't let the bad press fool you. Both are surprisingly
good. Apricots taste more like peaches than anything else, especially
when you use orange flavored drink mix. Prunes taste fresh and zesty,
not at all like the contents of Aunt Ola Mae's pocketbook. The secret
is adding a little zing from citrus. Without the citrus I admit that
prunes, especially, are a little cloying for my taste. With the drink
mix though, they aren't even recognizable as prunes, they are
transfomed into Zesty Plums.
As an aside, these are what our great-grandmothers called stewed
prunes. I have chosen not to refer them in this way because most
people have food prejudices against stewed prunes no matter how good
they are. Zesty Plums are much more acceptible to most family members
than stewed prunes, which have developed an undeserved reputation
over the years.
4 servings, about 1/2-cup each, including juice from pan.
