Corn Bread from GLAD Cornbread Mix

In a large bowl combine the eggs and soymilk. Add the cornbread mix. Stir until most of the lumps are gone. Turn the batter into a well greased 8 or 9 inch square pan or a 10-inch iron skillet. Bake at 400° for about 30 minutes. The  top will be golden brown and if you press the bread down gently in the center it should spring back up immediately.

This bread is easy to make and rushes into the oven so fast that there's cornbread on the table before anyone realizes you're baking. Great with spicy main dishes. Makes about 8 servings.

Corn Muffins

Prepare the batter above as directed. Drop the batter into well-oiled muffin cups, filling them about 2/3's full. Bake at 400° for about 20 minutes. They will be golden brown. Makes about a dozen.
