Ground Beef & Tomato Gravy
First prepare the ground beef. In a large skillet fry the meat over a medium-high temperature. Break it up into small bits as it cooks. When it's well browned drain off the fat; dump the beef into a colander and then rinse it in hot water. Rinse the skillet too. Transfer the meat back to the skillet. Add the tomatoes, onions, onion and pepper. Cook and stir for about 5 minutes, or until the tomatoes are bubbling and slightly thickened. Addt he broth powder and 3 cups of water. Bring to a boil. Meanwhile combine the cornstarch and water in a small tea cup. Use a fork to stir until the cornstarch is dissolved. Pour this into the boiling beef mixture. Cook and stir until the gravy is thickened and bubbly. Simmer a little longer if desired, to blend the flavors. You should have a nice, thick, rosy-brown gravy that tastes out of this world. Hearty, family-friendly, country style goodness. We serve this over mashed potatoes, but it's also good over rice or grits. This is an excellent way to use up a bumper crop of tomatoes when summer abundance is at it's peak. Conversely, it's also a great way to use up home canned tomatoes, come winter. Makes 6 servings. Per Serving when made with 1-pound of ground beef: 176 Calories; 7g Fat (37.8% calories from fat); 14g Protein; 13g Carbohydrate; 2g Dietary Fiber; 35mg Cholesterol; 461mg Sodium. Exchanges: 1/2 Grain(Starch); 2 Lean Meat; 1 Vegetable; 1/2 Fat. |
