Cinnamon Muffins

  • 1 cup soymilk

  • 2 eggs
  • 2-1/2 cups GLAD Sweet Muffin Mix
  • 2 teaspoons cinnamon or 1/2 teaspoon nutmeg
  • Optional: 1/2-cup raisins or chopped prunes

Combine the soymilk and eggs in a large bowl. Add the GLAD Sweet Muffin Mix and cinnamon. Mix until most of the lumps are gone. If desired, stir in 1/2 cup of raisins or chopped prunes.

Divide the batter between 12 well-greased muffin cups. Bake at 400° for 20 minutes. When done the muffins will be lightly browned and if you poke a toothpick through one of them it will come out clean. Remove from the oven.

Donut Muffins Variation

If you want to treat these as donut muffins then prepare them with nutmeg instead of cinnamon. Melt 1/4-cup margarine or butter. In a small bowl combine 2/3-cup powdered sugar and 1-teaspoon additional cinnamon. After removing the muffins from the oven dip the tops in melted margarine and then roll them in the powdered sugar mixture. Serve while still warm.

Allow to cool briefly before eating. These are a great lunch box treat. The recipe may be cut in half for a smaller batch.

Makes 12.

Muffin Squares.  If you don't have a muffin tin or prefer not to wash one then turn the batter into a 9 by 13-inch rectangular pan that has been well greased. Spread the batter evenly in the pan. Bake at 375° fro 25 to 30 minutes. When done the top will be golden brown, the sides will be pulling away from the pan and if you lightly press your finger to the top of the cake it will spring back quickly. Remove from the oven and allow to cool for 10 minutes before cutting into squares. I cut it 6 by 4, making 24 squares. These are just as tasty as the muffins and are easier for a child to make by themselves.
