Lemon Poppy Seed Muffins
Combine the soymilk, lemon juice and eggs in a large bowl. Add the GLAD Sweet Muffin Mix and poppy seeds. Mix until most of the lumps are gone. If desired add 1 teaspoon vanilla extract or 1/2 teaspoon lemon extract. You could also add the grated zest of 1 lemon if desired. Divide the batter between 12 well-greased muffin cups. Bake at 400° for 25 minutes. When done the muffins will be lightly browned and if you poke a toothpick through one of them it will come out clean. Remove from the oven. Makes 12. Muffin Squares. If you don't have a muffin tin or prefer not to wash one then turn the batter into a 9 by 13-inch rectangular pan that has been well greased. Spread the batter evenly in the pan. Bake at 375° fro 25 to 30 minutes. When done the top will be golden brown, the sides will be pulling away from the pan and if you lightly press your finger to the top of the cake it will spring back quickly. Remove from the oven and allow to cool for 10 minutes before cutting into squares. I cut it 6 by 4, making 24 squares. These are just as tasty as the muffins and are easier for a child to make by themselves.
