Orange & Carrot Muffins

  • 1 cup soymilk or orange juice

  • 2 eggs
  • 2-1/2 cups GLAD Sweet Muffin Mix
  • 1 cup shredded carrots
  • Grated rind of 1 orange
  • Optional: 1/2-cup raisins or chopped prunes

Combine the soymilk or orange juice and eggs in a large bowl. Add the GLAD Sweet Muffin Mix. Stir until most of the lumps are gone. Add the carrots and orange rind. Mix well.

Divide the batter between 12 well-greased muffin cups. Bake at 400° for 20 minutes. When done the muffins will be lightly browned and if you poke a toothpick through one of them it will come out clean. Remove from the oven.

Muffin Squares.  If you don't have a muffin tin or prefer not to wash one then turn the batter into a 9 by 13-inch rectangular pan that has been well greased. Spread the batter evenly in the pan. Bake at 375° fro 25 to 30 minutes. When done the top will be golden brown, the sides will be pulling away from the pan and if you lightly press your finger to the top of the cake it will spring back quickly. Remove from the oven and allow to cool for 10 minutes before cutting into squares. I cut it 6 by 4, making 24 squares. These are just as tasty as the muffins and are easier for a child to make by themselves.

My kids prefer these frosted with the following glaze:

Powdered Sugar Glaze

  • 1 cup powdered sugar

  • 1 tablespoon melted margarine

  • 2 to 3 teaspoons soymilk

  • 1/2 teaspoon vanilla extract

Combine all of the ingredients in a small bowl and beat smooth. Hot muffins can be dipped into the glaze or it can be spooned over top of the muffins. If the glaze isn't quite thin enough then add soymilk or water, no more than 1/4-teaspoon at a time, and beat well after each addition. Continue until the glaze is thinned to your liking.

Whether you like your muffins glazed or plain they are great for breakfast on the run, lunch boxes and healthy snacks for growing kids.
