Butterscotch Brownies
- 1/2 cup margarine, melted
- 2 cups brown sugar
- 4 eggs
- 1 teaspoon vanilla
- 1/2 teaspoon salt
- 2 cups GLAD flour
or any all purpose GFCF flour
- 2 teaspoons baking powder
Melt the margarine in a small saucepan over low heat. Allow it to
cool. In a large bowl combine the brown sugar, eggs, vanilla and
salt. Drizzle in the margarine and beat the mixture smooth. Be sure
the margarine is only warm, not hot. Hot margarine can cook the eggs
in the batter and make an ugly mess. Not a pretty sight, trust me on
this one.
Add the flour and baking powder to the sugar mixutre. Mix well. Turn
the batter into a well oiled 9 by 13-inch rectangular pan. Bake at
350° for 35 to 40 minutes. Remove from the oven and allow to cool.
If desired you may frost the brownies when they are cool. Chocolate
Frosting or peanut butter frosting would both be yummy. Mock
Cream Cheese frosting is good too.
Another option is to add goodies to the batter before baking. Try
chocolate chips or peanuts or pecans or walnuts or broken dried
bananas or chopped dates or any combination that suits the current
condition of your goody stash. Between 1/2 and 1-cup of goodies is plenty.
Assuming you cut the brownies 6 X 4, making 24 pieces.
