Excellent Chocolate Cake
 
  • 2/3 cup solid veletable shortening
  • 1-1/2 cups sugar
  • 4 eggs
  • 1 teaspoon vanilla
  • 1-1/4 cups soymilk
  • 1 tablespoon vinegar
  • 1/2 cup unsweetened cocoa
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 cups GLAD flour or any all purpose GFCF flour
 
NOTE: This cake is xanthan-free. It tastes exactly like normal chocolate cake, no one will ever guess it's gluten-free.
 
Into a large mixing bowl measure the vegetable shortening, sugar, eggs and vanilla.
 

TIP
To measure the shortening pack a 1/3-cup measuring cup full of solid shortening (like Crisco or a store brand). Scrape the top of the measuring cup so that the shortening is level. You can use your finger or a knife to level off the top. Put any excess shortening back in the shortening can. Scrape the shortening out of the measuring cup and plop it into the mixing bowl. Make sure to get all (or mostly all) of the shortening out of the measuring cup. Repeat the process to get another 1/3-cup, making 2/3-cup total. When you measure shortening your fingers get slimy. That's okay. It's just a fact of life. If you don't like slimy fingers then it will be a challenge for your to cook from scratch. To save the most money and get your grocery bill as low as it can go, bite the bullet, accept that your hands will at times be sticky or cold or gooey or slimy. Allow yourself to be okay with it. Remember you can wash them or wipe them on your apron or a tea towel as often as needed. If you keep soapy water in the sink then you can wash them in your dishwater whenever necessary.

 
Using electric beaters combine the shortening, sugar, eggs and vanilla until they are light and fluffy and creamy yellow. Add all of the remaining ingredients. Continue using the electric beaters and beat the mixture until it's even fluffier and creamy chocolate. This will take about 2 minutes.
 
Grease a 9 by 13-inch pan with solid shortening. Don't use vegetable oil, it will stick. If you are making a layer cake then use two 9-inch round pans. Grease the round pans with solid shortening and then flour them with a little cornstarch or rice flour or GLAD flour. Pour the batter into the pan(s). Bake at 350 degrees (preheated) for 30 to 35 minutes or until the sides of the cake pull away from the sides of the pan, or if you poke a fork or toothpick into the center of the cake it comes out clean, or if you lightly press your finger into the center of the cake it springs back quickly.
 
Remove the cake from the oven when it's done. Allow it to cool for at least 30 minutes before frosting. This is the perfect birthday cake.
