In a large bowl combine all of the ingredients with your hands. Mix thoroughly. Divide the mixture into 12 portions, about 1/3-cup each. Shape each portion into an oval. Arrange the portions on a 10 by 15-inch cookie sheet with sides about 1-inch deep. Flatten the ovals into cutlet shapes. Bake at 400° for about 20 minutes, or until the cutlets are well browned. Carefully drain off any fat that has collected in the pan. It will be hot, so try not to burn yourself. Discard the fat. Top the cutlets with the gravy of your choice, Brown Gravy and Pepper Cream Gravy are both very good. Serve immediately, or cover with foil and keep in a warm oven for up to an hour. Serve with mashed or baked potatoes, hot rolls or muffins, and spinach. Leftovers are divine! For a very attractive presentation arrange the cutlets in a deep serving platter. Scoop prepared mashed potatoes around the edge of the platter. Pour your favorite gravy over the cutlets. Sprinkle the mashed potatoes with dry or fresh parsley. Serve while still hot. Presented this way Country Cutlets are fancy enough for company. Makes 12 cutlets.
