Fudge Brownies
- 1 cup margarine, melted
- 2 cups sugar
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 4 eggs
- 1 teaspoon baking powder
- 1 cup Glad Flour
or gluten-free all-purpose flour
- 2/3 cup unsweetened cocoa
Melt the margarine and pour it into a medium bowl. Add the sugar,
salt and vanilla. Beat well. Crack in the eggs. Beat again until the
mixture is smooth and glossy. Measure in the baking powder, Glad
flour and cocoa. Beat again. The batter will be very thick.
Turn the batter into a well oiled 9 by 13-inch pan. Bake at 350°
for about 35 minutes. The edges should be pulling away from the side
of the pan and the center should be firm. If the center is still
jiggly then bake the brownies a little longer.
Variations.
- Add 1/2 to 1-cup of chopped walnuts or pecans
to the batter before baking.
- Add 1-cup of chocolate chips to the batter
before baking
- Add 1/2 to 1-cup of dried cranberries before baking.
- Add 1 to 2-cups of miniature marshmallows to
the batter before baking. These make a gooey brownie that is fancy
enough for a party. They must cool a lot before cutting though
because of the goo factor. If you do decide to make marshmallow
brownies for a party then make a practice batch first to make sure of
your results.
- Add 1/2 to 1-cup of Red Hot candies before
baking. These are adult friendly and especially good with tofu ice
cream on top.
- Frost with peanut butter frosting for a nice
contrast. Plain vanilla or chocolate frosting are good too. Sprinkle
the top of the frosting with coconut if desired.
- Add 1-cup of shredded coconut tot he batter
before baking. This is nice with the chocolate chips too.
- Add about a cup of crushed candy cane or red
and white mint candies to the batter before baking. Crush the candy
by first placing it in a plastic or paper bag (lunch bag size is
great). Cover the bag with a dish cloth or tea towel. Use a hammer,
meat mallet or the size of a sturdy saucepan to crush the candy into
small pieces. Continue until you have enough for your brownies.
- This is an old family favorite in my neck of
the woods. Add 1-teaspoon of orange extract in place of, or along
with the vanilla flavoring. If you don't have orange extract you can
also add the grated rind of one orange. This variation is always very
popular during the winter holidays when everyone is swamped with
plain brownies. The orange is unexpected and expensive tasting.
- Use cooked brownies to make brownie sundaes
for a kid's party. Provide tofu ice cream, homemade chocolate syrup,
sliced bananas and sprinkles. If you'd like some strawberry syrup too
then open a jar of fruit sweetened strawberry jam and melt it in a
small pan over medium heat. Add a little water if necessary, to thin
it to syrup consistency. Chopped nuts, maraschino cherries, coconut,
dried cranberries, marshmallows and gluten free pretzels are all good
topping ideas. Give your pantry a look over and see what you can come
up with.
