Lemon Slushie
  • 1 cup water
  • 1/2 cup lemon juice
  • 1/2 cup sugar or 1/3 cup honey
  • 4 cups ice cubes, or enough to almost fill the blender
 
Get out your blender. Add the water and lemon juice. Pour in the honey or other sweetener. If you use honey then lightly oil the measuring cup before measuring the honey. This will make it all slip out more easily.
 
Add the ice cubes. Process the mixture at high speed for 2 full minutes. The ice should be completely chopped and the mixture will be a lovely golden color. Divide the mixture between four 12-ounce glasses. Garnish with a lemon wedge and a tall straw. Serve immediately.
 
Lemon-Mint Slushy: Brew mint tea in the normal way using 2-teabags to 1-cup of water.  Allow it to steep long enough to make it strong. Use this in place of the water in the original recipe. Process as directed.
 
Lime Slushy: Replace the lemon juice with lime juice. This is especially good with mint.
 
Per 1-1/2 cup serving: 104 Calories; 0g Fat (0.0% calories from fat); trace Protein; 28g Carbohydrate; trace Dietary Fiber; 0mg Cholesterol; 9mg Sodium.  Exchanges: 1/2 Fruit; 1 Other Carbohydrates. 13% RDA of Vitamin C per serving.
 
Makes four 12-ounce servings.
