Light Vinaigrette
 
  • 1/4 cup olive oil or vegetable oil
  • 1/4 cup red wine or apple cider vinegar
  • 1/4 cup tap water
  • 1 teaspoon dry parsley
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • Goodly dash black pepper
  • 2 second squirt of nonstick spray, optional
 
This recipe goes together very quickly. It's a basic vinaigrette dressing that is low in calories and high in flavor. In an 8-ounce jar combine all of the ingredients  spray and shake briskly to combine.  Serve immediately or chill for an hour or two before serving. Shake again right before measuring. One tablespoon will cover 2 cups of salad greens just perfectly. Makes 3/4-cup or 12 servings, 1-tablespoon each.
