Tofu Sour Cream
 
  • 12 ounce box firm silken tofu
  • 2 to 4 tablespoons neutral vegetable oil, corn oil tastes good
  • 2 tablespoons lemon juice
  • 1 teaspoon vinegar, apple cider is good
  • 1 teaspoon sugar
  • 1/4 to 1/2 teaspoon salt
 
Combine all of the ingredients in a blender or food processor. Process until smooth. You can also put all the ingredients in a bowl and puree with a hand-held blender until smooth. In a blender you will probably need 4 tablespoons of vegetable oil to make the mixture thin enough to process easily. To save calories you could use 2-tablespoons oil and 2-tablespoons water or soymilk. I think it tastes better with the larger amount of oil. Be sure to process the mixture long enough to make it completely smooth.
 
Makes about 2 cups; 8 servings of approximately 1/4-cup each.
 
The following data assumes 2-tablespoons oil and 1/4-teaspoon salt.
