Process the rolled oats into flour using a blender or coffee grinder.
Pour them into a medium-sized mixing bowl. Add the baking powder and
salt. Mix well.
In a separate bowl combine the milk, eggs, oil and honey. Mix well.
Pour the wet ingredients into the dry ingredients. Stir until smooth.
Coat a skillet with cooking spray or coat it lightly with vegetable
oil. Heat to medium-high. Use about 3-tablespoons of batter for each
pancake. Spoon the batter onto the hot skillet. When the top is dry
and the underside is lightly browned, flip the pancake to brown the
remaining side. Continue until all the batter is used.
I like my pancakes with a little molasses. My boys prefer light
pancake syrup.
These are tender and light textured. This has become our favorite
pancake recipe. The one we use day in and day out. Good enough for
company, for picky eaters and everyone in between.
