Perfect Plain Muffins
In a medium bowl combine the budget blend flour, baking powder, salt and sugar. In a separate bowl combine the oil, eggs and soymilk. Beat the wet ingredients until well blended. Pour the wet ingredients into the bowl of dry ingredients. Stir briskly until all the dry ingredients are moistened, but a few lumps still remain. Divide the batter evenly between 12-well oiled muffin cups. Bake at 400° for 20 minutes, or until the muffins are lightly browned. They will be a beautiful sunny yellow color with highlights of golden brown. Turn the muffins out of the pans. Arrange them in a bowl that has been lined with a tea-towel or a pretty napkin. Serve hot for best results. These muffins are perfect. They can be served to any guest, any company, any hungry family and they are the perfect accompaniment to any meal that needs a hot bread to fill in all the empty places. Makes 1 dozen. I haven't tried a lot of variations with these yet, but will update this page with my results when I do.
