Spicy Oriental Noodle & Tofu Stir-Fry

  • 8 ounces whole wheat spaghetti, cooked according to package directions

  • 1 teaspoon peanut oil
  • 12 ounces firm tofu, cut into cubes
  • 1 cup sliced onion
  • 1 pound frozen oriental stir-fry vegetables, partially thawed if possible
  • 1/2-teaspoon EACH cayenne pepper, garlic powder and powdered ginger
  • 1-1/2 teaspoons honey
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon peanut oil 

First put on the spaghetti to cook. When it's tender drain it well and set aside. Meanwhile coat a large skillet or pot with nonstick spray. Add 1-teaspoon oil. Add the tofu and fry over medium-high heat until it browns lightly. Add the onion and fry for 2 or 3 more minutes, or until the onion is becoming tender. Add the stir-fry veggies, cayenne, garlic, ginger and honey. Stir-fry until the vegetables are hot and tender-crisp. Finally add the cooked spaghetti, soy sauce and 1-tablespoon peanut oil. Stir gently but thoroughly so the spaghetti is evenly coated with the oil and seasonings. Reheat if necessary and serve. Makes 4 portions.
