Spicy Oriental Noodle & Tofu Stir-Fry
First put on the spaghetti to cook. When it's tender drain it well and set aside. Meanwhile coat a large skillet or pot with nonstick spray. Add 1-teaspoon oil. Add the tofu and fry over medium-high heat until it browns lightly. Add the onion and fry for 2 or 3 more minutes, or until the onion is becoming tender. Add the stir-fry veggies, cayenne, garlic, ginger and honey. Stir-fry until the vegetables are hot and tender-crisp. Finally add the cooked spaghetti, soy sauce and 1-tablespoon peanut oil. Stir gently but thoroughly so the spaghetti is evenly coated with the oil and seasonings. Reheat if necessary and serve. Makes 4 portions. Per Serving (excluding unknown items): 390 Calories; 11g Fat (23.4% calories from fat); 21g Protein; 57g Carbohydrate; 8g Dietary Fiber; 0mg Cholesterol; 647mg Sodium.
