Tomato, Cucumber & Green Pepper Salad

  • 2 medium tomatoes, chopped, or 4 Roma tomatoes, chopped

  • 1 large cucumber, peeled and chopped
  • 1 green pepper, chopped
  • 1/4 cup minced cilantro or parsley (optional)
  • 4 teaspoons olive oil or vegetable oil
  • 3 tablespoons lemon juice
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper

  1. Peel, chop and prepare the vegetables as directed in the list of ingredients.  

  2. Place the vegetables in a large bowl. Add the oil, lemon juice, salt and pepper. Toss to combine.

  3. The salad may be served immediately or chilled for a few hours before serving. If desired, a couple of green onions can be chopped up and added along with the other vegetables. 

  4. Makes 4 servings.

Per Serving: 79 Calories; 5g Fat (51.2% calories from fat); 2g Protein; 9g Carbohydrate; 2g Dietary Fiber; 0mg Cholesterol; 278mg Sodium.  Exchanges: 1-1/2 Vegetable; 1 Fat.
